Sourdough Fried Chicken

You’ll need 3 bowls:
1️⃣ Bowl 1 – Soak

½ cup buttermilk

Soak chicken for at least 1 hour or overnight
2️⃣ Bowl 2 – Wet Mix

½ cup (113g) sourdough starter
-
1 egg
-
½ cup buttermilk (or milk + vinegar)
3️⃣ Bowl 3 – Dry Mix

2 tsp kosher salt
-
2 tsp garlic powder
-
2 tsp onion powder
-
2 cups all-purpose flour
-
1 cup cornstarch
-
1 tsp smoked paprika
-
1 tsp black pepper
-
1 tsp cayenne
-
½ tsp dry mustard
-
1 tsp ground ginger
To cook:

After soaking, coat the chicken in the dry mix.

Dip in the sourdough wet mix.

Re-coat in the dry mix.

Deep fry in peanut oil until golden brown.

Finish in the oven at 350°F for about 20 minutes.

Optional: sprinkle with flaked salt.
