Sourdough Fried Chicken

You’ll need 3 bowls:

1️⃣ Bowl 1 – Soak

  • ½ cup buttermilk

  • Soak chicken for at least 1 hour or overnight

2️⃣ Bowl 2 – Wet Mix

  • ½ cup (113g) sourdough starter

  • 1 egg

  • ½ cup buttermilk (or milk + vinegar)

3️⃣ Bowl 3 – Dry Mix

  • 2 tsp kosher salt

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 cups all-purpose flour

  • 1 cup cornstarch

  • 1 tsp smoked paprika

  • 1 tsp black pepper

  • 1 tsp cayenne

  • ½ tsp dry mustard

  • 1 tsp ground ginger

To cook:

  1. After soaking, coat the chicken in the dry mix.

  2. Dip in the sourdough wet mix.

  3. Re-coat in the dry mix.

  4. Deep fry in peanut oil until golden brown.

  5. Finish in the oven at 350°F for about 20 minutes.

  6. Optional: sprinkle with flaked salt.
