Banana Bread


INGREDIENTS:

  • 250 g (about 3 medium) overripe bananas, mashed

  • 1 large egg

  • 5 g (1 tsp) vanilla extract

  • 70 g butter, melted

  • 100 g sourdough starter (discard or active)

  • 200 g all-purpose flour (slightly more to account for lower evaporation)

  • 8 g baking powder (about 2 tsp) (increase slightly for better rise)

  • 100 g brown sugar

  • 40 g white sugar (optional)

  • pinch of salt

  • 20 g golden syrup or honey for brushing after baking

INSTRUCTIONS:

 

  1. Preheat oven to 350°F (reduce temperature slightly). Lightly grease or line loaf pan.

  2. Mash the bananas in a large mixing bowl until smooth.

  3. Add in the egg, vanilla, melted butter, and sourdough starter. Mix until combined.

  4. In a separate bowl, whisk together the flour, baking powder, sugars, and salt.

  5. Gently fold the dry ingredients into wet ingredients just until combined. Don’t overmix.

  6. Pour batter into your prepared loaf pan and smooth out the top.

  7. Bake for 50–60 minutes, check with a toothpick at around 45 minutes. It should come out with a few moist crumbs.
