Chocolate Chip Banana Bread
Ingredients

1 1/2 cups all-purpose or bread flour

1/2 teaspoon cinnamon

1/2 teaspoon salt

1 teaspoon baking soda

5 ripe bananas

2 eggs

1 teaspoon vanilla extract

1/2 cup brown sugar

1 stick (1/2 cup) butter, melted

1/2 cup sourdough discard (unfed starter)

8 ounces semi-sweet chocolate chips
Directions

Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray.

In a large mixing bowl, combine the all-purpose flour, cinnamon, salt, and baking soda. Mix well and set aside.

In another bowl, mash the ripe bananas. Add the eggs, vanilla extract, brown sugar, melted butter, and sourdough discard. Use a hand mixer to blend the wet ingredients until well combined, about 20 seconds.

Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or large spoon to mix until everything is well incorporated.

Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the batter.

Transfer the batter into the prepared loaf pan, spreading it out evenly.

Bake in the preheated oven for 50 minutes to 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Once baked, remove the loaf from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing. Enjoy!
