Crustless Sourdough Discard Quiche
A simple, savory quiche that magically forms its own crust thanks to sourdough discard—no dough-making required!
Ingredients

8 large eggs

1 cup sourdough starter (discard, unfed)

½ cup milk (coconut milk used here)

Salt, pepper, onion powder, garlic powder — to taste

Grated Parmesan cheese (optional)

Sautéed mushrooms

Fresh chopped spinach

Crumbled bacon
Instructions

Preheat oven to 375°F (190°C).

Whisk together eggs, sourdough starter, milk, seasonings, and cheese (if using) in a large bowl.

Grease a deep-dish pie pan generously with butter.

Add spinach, mushrooms, and bacon to the bottom of the dish.

Pour the egg mixture evenly over the fillings.

Bake for about 50 minutes, or until the quiche is fully set and golden on top.
