Garlic-Parmesan Sourdough Discard Twists
Crunchy, cheesy, and garlicky—these sourdough discard breadsticks are the ultimate savory snack or side dish. Perfect on their own or dipped in marinara, soup, or cheese sauce.
Ingredients
For the Dough

1 cup sourdough discard (unfed, room temperature)

1¼ cups all-purpose flour

½ tsp salt

½ tsp garlic powder

2 tbsp olive oil

2–4 tbsp water (as needed for kneading)
For the Topping
-
2 tbsp melted butter
-
½ tsp garlic powder
-
¼ tsp dried oregano or Italian seasoning (optional)

⅓ cup finely grated Parmesan cheese
-
Pinch of flaky sea salt (optional)
Instructions
1. Make the Dough
In a large bowl, combine sourdough discard, flour, salt, garlic powder, olive oil, and enough water to bring the dough together. Knead for 3–4 minutes until smooth and elastic. If sticky, add a little more flour.
2. Rest the Dough
Cover and let rest for 30 minutes to relax the gluten. This makes rolling easier.
3. Roll & Shape
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Roll dough on a lightly floured surface into a rectangle about ⅛ inch thick.
Brush with melted butter and sprinkle evenly with garlic powder, Parmesan, and herbs.
4. Cut & Twist
Cut dough into ½-inch wide strips. Twist each strip several times and lay on the prepared baking sheet, spaced slightly apart.
5. Bake
Bake for 15–18 minutes, or until golden and crisp. For extra crunch, bake an additional 2–3 minutes.
6. Serve
Let cool slightly before serving. Enjoy with marinara, soup, or simply as a savory snack.
