Sourdough Banana Bread (8000 ft)

INGREDIENTS:

  • 250 g (about 3 medium) overripe bananas, mashed

  • 1 large egg

  • 5 g (1 tsp) vanilla extract

  • 70 g butter, melted

  • 100 g sourdough starter (discard or active)

  • 190 g all-purpose flour

  • 10 g baking powder (about 1¼ tsp)

  • 100 g brown sugar

  • 40 g white sugar (optional)

  • pinch of salt

  • 20 g golden syrup or honey for brushing after baking

INSTRUCTIONS:

  1. Preheat oven to 375°F. Lightly grease or line loaf pan.

  2. Mash the bananas in a large mixing bowl until smooth.

  3. Add in the egg, vanilla, melted butter, and sourdough starter. Mix until combined.

  4. In a separate bowl, whisk together the flour, baking powder, sugars, and salt.

  5. Gently fold the dry ingredients into wet ingredients just until combined. Don’t overmix.

  6. Pour batter into your prepared loaf pan and smooth out top.

  7. Bake for 45–55 minutes, check with a toothpick at around 40 minutes, to ensure it comes out with just a few moist crumbs.
