Sourdough Cheese Crackers

Yield: ~50 crackers

Ingredients

  • 200 g sourdough discard (1 cup stirred, unfed starter)

  • 2 Tbsp unsalted butter, melted

  • ¼ tsp fine sea salt

  • 1 cup medium cheddar cheese, finely shredded and loosely packed (60 g)

  • Seasonings to taste: flaky sea salt, everything bagel seasoning, sesame seeds, etc.

 


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, melt butter and let cool to lukewarm. Stir in sourdough discard and salt.

  3. Add shredded cheese and mix well.

  4. Pour mixture onto parchment-lined sheet. Use an offset spatula to spread very thin (aim for ~11x14 inches).

  5. Lightly sprinkle flaky salt on top.

  6. Bake for 10 minutes, then remove and score into squares using a pizza cutter. Optional: poke holes in the center of each cracker with a wooden skewer.

  7. Return to oven and bake an additional 20 minutes or until crisp and golden.

  8. Cool completely on the baking sheet to dry out fully. Store in an airtight container.

 


 

Notes

 

Cheese Variations (Substitute 1 cup / 60 g):

 

  • Sharp cheddar

  • White cheddar

  • Monterey Jack

  • Parmesan (use only ½ cup to prevent over-salting)
