Sourdough Discard Snickerdoodle Cookies

A nostalgic favorite made sourdough-style.


Ingredients

1 large egg yolk

1 large egg

3 cups flour

1 tsp baking soda

1½ tsp cream of tartar

1½ cups granulated sugar

½ tsp sea salt

1½ sticks butter (room temp)

½ cup sourdough discard


Cinnamon Sugar Coating

½ cup granulated sugar

2 tsp cinnamon


Instructions

Preheat oven to 350°F. Mix flour, baking soda, cream of tartar, salt in a bowl. In a separate bowl, cream sugar and softened butter until fluffy. Add egg, yolk, and discard. Mix again until light. Add dry ingredients to wet and stir until no dry flour remains. Roll dough into 2” balls (~2 tbsp each). Dough may be sticky—flour hands if needed. Roll in cinnamon sugar. Place 3” apart on baking sheet (they’ll spread). Bake 9–12 minutes. Don’t overbake—they should look slightly underdone.
