Sourdough Sandwich Bread


Ingredients:
  • 2 1/2 cups bread flour (such as All Trumps or regular bread flour)

  • 1 cup active sourdough starter

  • 1 cup water

  • 1/4 cup extra virgin olive oil or coconut oil

  • 1/8 cup raw sugar or honey

  • 1 teaspoon salt


Directions:

  1. In a stand mixer, combine all ingredients. Mix on low speed and gradually increase until the dough is well incorporated and pulls away from the sides of the bowl. Do not overwork the dough.

  2. For same-day baking: allow the dough to double in size.

  3. Once doubled, roll the dough and place it in a greased 9x5 loaf pan. Let it rise again until just above the rim of the pan.

  4. Preheat your oven to 392°F (200°C).

  5. Slit the top of the dough and spritz it lightly with water.

  6. Cover the loaf pan with another inverted pan or a baking lid.

  7. Bake covered for 15 minutes, then uncover and bake for an additional 20–25 minutes, or until the top is golden brown.

  8. Remove from the oven and turn the loaf out onto a baker’s rack to cool completely before storing.
